Today we are making a delightful and super easy breakfast treat: an Oven-Baked Pancake with Brown Sugar and Banana Topping. This easy one-pan dish re-heats like a dream too! And you all know how I love BROWN SUGAR!!!!
Ingredients:
Topping:
1/2 Cup Brown Sugar
1/3 Cup Margarine
1/2 Teaspoon Vanilla
1/4 Cup Maple Syrup (you could use more but I don’t love syrup)
OPTIONAL: One BANANA sliced into discs.
Pancake:
11/2 cups Bisquick Original Baking Mix (I know. I am so trashy, sometimes)
1/4 Cup Brown Sugar
1 Cup Milk
2 Eggs
1/2 Teaspoon Vanilla
2 Tablespoons Ground Flax Seed (OPTIONAL, but healthy
)
1/2 Teaspoon Cinnamon
Turn the oven on 350 degrees and grab your 13 x 9 Pyrex or bake-ware of your choosing.
Throw the first 4 ingredients (all of the “topping” ingredients EXCEPT the optional banana) into the pan:
Pop that into your “preheating” oven. We want it to get melt-y so we can give a stir.
While the topping is getting all heated up, let’s mix up our pancake batter:
Place remaining ingredients ( bisquick, brown sugar, milk, eggs, flax, vanilla, cinnamon) in a medium bowl or giant sized measuring cup (4 cups) and mix well. Or make your toddler mix it well. See that face? It was pretty fierce. She didn’t last long.
Okay, now that you are all mixed up, your topping ingedients should be good and melty (especially if you actually remembered to turn the oven on… )
Now, if you are going to add banana (Yes, you should), slice it up and layer it on:
Now pour your batter on top, gently (this is why I like to use the giant measuring cup):
Pop this back into your preheated oven and bake for about 30 mins or until it’s springy to the touch.
When it’s done:
Look at that. All hot and bubbly. I cut into it right away and plate it up (UPSIDE DOWN so the Banana/Brown Sugar is on top) BUT it’s really hot so definitely let it cool some for those with sensitive mouths or those who want to keep their taste buds.
This recipe was adapted from Betty Crocker’s Maple Topped Oven Pancake and is pretty darn good in it’s original form too.
