I made Chocolate Covered Katie’s Fudge Babies. OH MY GOSH! It tastes like a cookie of WONDERFUL. It’s a homemade version of a Larabar (jocolat), which I’ve never had (and I NEVER NEED TO). This isn’t the first recipe of Katie’s that I’ve tried. I make her “voluminous oatmeal” ALL THE TIME – I have never had oatmeal taste so good.

Here’s the awesome thing about Chocolate Covered Katie – - – - – - – - – Ready?

SHE MAKES HEALTHY DESSERTS – my stars…. This little lady has turned my world upside down. Ya’ll know how much I bitch about being a fatty and I recently started to log my food/calories/exercise again, so her blog is a life saver for a sweet-tart like me.

So the Larabar knockoff is really great. It contains healthy ingredients and only a few of them.

1 C. walnuts

1 1/3 C. pitted dates

1 tsp vanilla

1 tbs. cocoa (give or take)

dash of salt

*grind it all up in the food processor and shape into balls or bars. Et Voila!

IT IS LITERALLY a power bar. No sugar added at all (and i still like it!!) It’s about 100 calories per serving and because of the walnuts, cocoa, and vanilla, each fudge baby tastes like a lovely little cookie!!

While these dogs will ruin my day of calorie counting, hopefully a walk will help… I pinned them forever ago and just let them sit. lalalalalala and then they smacked me in the face and I’ve been drooling over them for about a week so I MUST HAVE THEM.

I will omit the relish ( i hate sweet pickles but I may chop some dill pickles) as well as the fancy mustard (i’ll just use yellow).

 

Made it. YUM. It’s going into the rotation but only occasionally as there are over 500 calories per serving… le sigh…

 

Anyway, i’m back. sort of. XO
